Steamed Mussels in a White Wine Garlic Sauce

Steamed Mussels
Steamed Mussels in a White Wine Garlic Sauce, is a very simple, yet delicious meal. I serve it with some warm, crusty bread for dipping and a simple green salad.


Ingredients:
2 tablespoons Olive Oil
3 whole Garlic cloves, minced
1 cup White Wine
1 pound Mussels
2 tablespoons chopped fresh Parsley
1/2 cup Shallots, finely chopped
1 cup Chicken Stock
Salt to taste
Fresh Ground Pepper to taste
Lemon wedges
1 loaf crusty fresh Bread of choice (for dipping!)



Step one: Place mussels in a bowl and check each mussel to ensure that none have already opened, if any of the mussels have opened discard them. Set oven to 400 degrees.


Step two: Heat 2 tablespoons of olive oil over medium heat. Add shallots, salt and pepper saute for 5 minutes.


Step three: Add garlic and cook for 1 minute.

Step four: Add white wine, chicken stock and Mussels, stir and cover for 9-10 minutes.

Step five: Add parsley, stir cook for 1 additional minute. Place bread in oven and cook for approximately 5 minutes.


Step six: Discard any unopened mussels before serving, place in large bowl for the center of the table to share (or multiple bowls depending on the size of your party, it is better to keep the mussels in the sauce rather than serve on individual plates).


Dinner for two.
