Grilled Herb Shrimp on Skewers




Grilled Herb Shrimp on Skewers is an excellent summer appetizer to bring to a dinner party with friends. It is also a great entree when served over rice with mango salsa (salsa recipe to follow!)

Ingredients:
3 Garlic cloves, minced
1 medium Yellow Onion, small-diced
1/4 cup minced fresh Parsley
1/4 cup minced fresh Basil
1 teaspoon Dry Mustard
2 teaspoon Dijon Mustard
1 1/2 teaspoon kosher Salt
1/4 teaspoon freshly ground Pepper
1/4 cup good Olive Oil
Juice of 1 Lemon
2 pounds of Shrimp

Step one: Combine all the above ingredients in a medium mixing bowl, add shrimp.

Step two: Cover and marinate for 1 hour at room temperature or for up to 2 days in the refrigerator (I usually do 24 hours, but have also done 2 hours)

Step three: If using wooded skewers, soak in water for 30 minutes. Skewer the shrimp so that both ends of each shrimp are skewered. Broil in the oven until shrimp is cooked, approximately 2 minutes each side.
