Wasabi Crusted Salmon


Wasabi Crusted Salmon is one of my favorite recipes to make, I have played with the proportions for the wasabi crust and these seem to work best! This recipe serves four but can easily be altered to fit your group.

Ingredients:
3/4 cup Wasabi Peas
2 Salmon fillets with skin
1 tablespoon finely grated Lime peel (lime zest)
2 Garlic cloves, minced
1/2 cup Panko
2 tablespoons Olive Oil
Salt
Fresh ground Pepper

Step one: Preheat oven to 400 degrees.

Step two: Place wasabi peas, lime zest, garlic and panko in food processor, blend until ground.


Step three: Heat olive oil over medium-low heat in medium skillet. Place salmon fillets in skillet skin side up and cook for 4 minutes.

Step four: Place salmon fillets skin side down on a lightly oiled baking sheet (covering the baking sheet in tin foil is also a good option), brush with olive oil and season with salt and fresh ground pepper. Press ground wasabi mix into the salmon and place in the oven.

Step five: Bake for 12-15 minutes and serve.
