My Sauteed Tofu with Zucchini recipe came from leftover ingredients that I did not want to go to waste one weeknight. It turned out to be a very simple, but delicious dish for vegetarians.
Ingredients:
1 container extra firm cubed tofu
Zest of one lemon
2 minced large garlic cloves
1/3 cup pine nuts
2 chopped zucchini
2 tablespoons olive oil
1 teaspoon sea salt
Fresh ground pepper
Step one: Pour contents of tofu container into strainer, wash with warm water.
Step two: Heat 2 tablespoons of olive oil in a deep skillet over medium-low heat.
Step three: Add tofu, saute for 4 minutes.
Step four: Add chopped zucchini, minced garlic, pine nuts, lemon zest and sea salt. Cover and cook for 30 minutes or until tofu is golden brown.
Step five: Season with freshly ground pepper and serve.
I suggest serving over Jasmati rice or brown rice.
