Grilled Vegetables in a city kitchen

The one thing that is most difficult for city dwellers in the summer time (especially men) is the inability to grill. Although, it does not have quite the same allure as being outside next to your Weber, the George Foreman "Lean Mean Grilling Machine" is an excellent alternative, with great taste, and you even get those aesthetically pleasing grill marks! Here is a simple example; grilling vegetables.

Ingredients:

Fresh Zucchini, sliced
White Onion, thickly sliced

Method:

Pre-heat George Foreman (plug it in). Season with salt, pepper and brush with olive oil.

Place on grill in batches and grill to your liking.

Serve with fresh white fish and corn and you have the perfect summer meal (prepared in a city kitchen!). Enjoy!
