Spaghetti with Turkey Meatballs!


The perfect casual, yet delicious and might I say under rated sunday night meal!

Ingredients, Meatballs:
1 pound lean Ground Turkey
1 pound organic Chicken Apple Sausage, casings removed, finely chopped
1 pound Proscuitto, finely chopped
1 1/2 cups fresh Bread Crumbs
1/2 cup fresh Parsley
1 teaspoon Oregano
1 1/2 teaspoons minced Garlic
1 Egg, lightly beaten
1 tablespoon Olive Oil
Salt
Freshly Ground Pepper


Process:

Step one: Preheat oven to 400 degrees. In a food processor chop the fresh bread (I use a french baguette with crust on). Place in large mixing bowl. Add ground turkey, proscuitto, chicken apple sausage, oregano, parsley, minced garlic, egg, salt and pepper. Mix well.

Step two: Line baking sheet with tin foil, lightly roll the meat mixture into approximately 2 inch balls and place on baking sheet. Brush each ball with olive oil.

Step three: Place baking sheet in oven and bake for 40 minutes.

Ingredients, Sauce:
1 can (12 oz.) Crushed Tomatoes
1 cup dry Red Wine
1 finely chopped Spanish Onion
1 1/2 tablespoons fresh Parsley
1 1/2 tablespoons minced Garlic
2 tablespoons of Olive Oil
Salt
Freshly Ground Pepper

Process:

Step one: Heat the olive oil over medium-low heat. Add the onions and cook for 8-10 minutes or until translucent. Add the garlic and cook for one additional minute. 

Step two: Add the red wine and cook on high heat for 3-4 minutes or until the liquid is almost completely evaporated, stirring constantly. 

Step three: Add the crushed tomatoes, parsley, salt and pepper and cook over low heat for 10 minutes.


I usually serve over Linquine with fresh bread for dipping and a glass of red wine! Enjoy!
