My favorite omelette.


One of our favorite Sunday morning meals is a vegetable omelette. We usually mix it up but our consistent favorite "fillings" are sweet yellow tomatoes, zucchini, scallion, garlic and fresh basil- the combination is delicious, fresh and light! Enjoy!

Process:

Step one: Chop the zucchini, sweet yellow tomatoes and scallions.

Step two: Heat two tablespoons of olive oil over medium-high heat, add the garlic and sauté for one minute.

Step three: Add the tomatoes and zucchini and sauté over medium heat for 8-10 minutes or until soft, add the scallions and sauté for two additional minutes.

Step four: Remove the sauteed vegetables and place on a plate. 

Step five: Add one teaspoon of olive oil to the pan. Add three eggs and spread to fill the pan, cook over medium heat for two minutes. Evenly add the vegetables and fresh basil leaves over the egg. Cook for approximately three minutes.



Step six: Flip and cook for approximately two minutes.

Step seven: Serve with your favorite toast!
