Friday Night Dinner

Pasta with Zucchini, Breadcrumbs and Lemon Zest served with Zucchini Boats.




Pasta ingredients:

1 package fresh Linguine
2 large Zucchini, chopped
2 Garlic Cloves, minced
1 cup fresh Bread Crumbs
Zest of 1 large Lemon
1 teaspoon Red Pepper Flakes
3 tablespoons Olive Oil
Salt
Fresh ground Pepper

Zucchini Boats ingredients:

2 large Zucchinis
1/2 cup fresh Bread Crumbs
1 tablespoon Pine Nuts
Cherry Tomatoes cut in half
1 teaspoon Garlic Powder
Salt
Fresh ground Pepper

Pasta method:


Step one:  Pre heat oven to 400 degrees. Place chopped zucchini, 2 tablespoons olive oil, red pepper flakes, salt and pepper in a large bowl and mix.


Step two: In food processor grind fresh bread and garlic add to bowl.


Step three: Place zucchini mixture in glass Pyrex dish and bake for 15 minutes.


Step four: Simultaneously boil linguine, drain and place back in pot, mix with remaining tablespoon of olive oil.


Step five: When cooked add zucchini mixture and lemon zest to the linguine, mix well.






Zucchini Boats method:


Step one: Preheat oven to 400 degrees. Cut zucchini in half and scoop out the seeds. Place on baking sheet, brush the surface of each zucchini with olive oil.


Step two: Arrange grape tomatoes, pinenuts and bread crumbs on each zucchini. Sprinkle with garlic powder, salt and pepper.


Step three: Bake in oven for 30 minutes and serve.
