Caramelized Onion, Roasted Butternut Squash and Goat Cheese Pizza


I found this recipe on Pinterest.com! It originally came from a small Pizza Cafe in Colorado. It is a great recipe for a big group, easily doubled or tripled depending on the size of the group.
Ingredients
2 medium sized pizza crusts approx. 12'' (pre-made or fresh pizza dough both work great!)
2 1/2 cups peeled butternut squash, cut into 1/2 cubes
3 Tbsp olive oil
1 large yellow onion, thinly sliced
1 Tbsp balsamic vinegar
Sea Salt and Freshly Ground Pepper
3 cups arugula, roughly chopped
Crumbled goat cheese
1 Tbsp fresh sage, roughly chopped
Process:
Step one: Preheat oven to 400F. In a glass Pyrex dish, toss the squash with 1 Tbsp of the olive oil and season with black pepper and sea salt. Bake the squash for about 30 minutes or until tender, tossing once halfway. Remove from oven and set aside.

Step two: Simultaneously, in a large skillet, add sliced onions and 1 tbsp of olive oil over a medium heat. Saute until onions begin to color, stirring frequently.  Add the balsamic vinegar and a dash of sea salt and stir or toss to combine.  Cover, reduce the heat to low-medium, and let cook for about 25 minutes, or until the onions have cooked down and caramelized. Set aside.




Step three: Brush olive oil over the crust and top with cooked squash, onion, chopped arugula, crumbled goat cheese and sage. (I added leftover roasted asparagus because I had it in the fridge).





Step four: Bake until the crust is crispy about 15-18 minutes.
