Sauteed Shrimp Marinated in Honey and Lime



This shrimp is great over pasta or rice, lots of flavor and easy to prep the night before if entertaining on a weeknight!

Ingredients:
1 pound large wild shrimp, peeled and deveined
1/4 cup olive oil
2 tablespoons honey
juice of one small lime
zest of one small lime
2 cloves garlic, minced

1/4 cup blanched almond slices
salt and pepper
Method:
Step one: In a large Ziploc bag, combine the honey, lime, lime zest, garlic, salt and pepper. Wash, peel and devein the shrimp and place it in the fridge.
Step two: Let the shrimp marinate for a minimum of two hours (for best results marinate over night). Periodically shake the bag to ensure that the shrimp are evenly marinated.
Step three: Remove the shrimp from the fridge and let them sit until room temperature. Heat a large skillet over medium-high heat.

Step four: Add your shrimp and almonds to the pan, saute on one side for approximately one minute, flip, and cook for another 30 seconds, or until the shrimp are opaque.
