Mango Salsa


Mango Salsa, a great sauce to accompany seafood!

Ingredients:

2 Tablespoons good Olive Oil
1 1/2 cups diced Yellow Onion (approximately 2 onions)
2 teaspoons peeled, minced fresh Ginger
1 1/2 teaspoons minced Garlic
2 ripe Mangos, peeled, seeded, small diced
1/3 cup fresh or bought Orange Juice
2 teaspoons light Brown Sugar
1 teaspoon Salt
1/2 teaspoon fresh ground Pepper
1 to 2 teaspoons minced fresh Jalapeno (1 pepper, no seeds)


Step one: Saute the oil, onions, ginger over low heat for 10 minutes until translucent.
Step two: Add garlic, cook 1 minute.
Step three: Add Mangos, cook 10 minutes.
Step four: Add orange juice, brown sugar, salt, pepper and jalapenos cook for 10 minutes stirring occasionally.
Step five: Remove from heat, serve at room temperature or warm.
