Since moving to Boston (and close to Whole Foods!) I have loved preparing seared tuna served with a soy, ginger, peanut sauce. It is a very easy, quick and light summer meal! Most important ingredient to a successful seared tuna is finding fresh, wild caught tuna!
Ingredients:
2 wild caught, fresh tuna fillets
2 tablespoons, 1 teaspoon olive oil
2 scallions thinly sliced
1/4 cup low sodium soy sauce
1 teaspoon organic peanut butter
1 small shallot thinly sliced
1 teaspoon minced fresh ginger
1 teaspoon minced garlic
1/2 teaspoon sesame seeds
Serves 2
Method:
Step one: Heat small skillet over medium-low heat, add 2 tablespoons of olive oil and scallions, cook for three minutes, stirring constantly.
Step two: Add garlic and ginger to skillet, cook for 1 minute, stirring constantly.
Step three: Reduce head to simmer and add soy sauce and peanut butter, cook for five minutes.
Step four: Add scallions and sesame seeds to sauce and remove from heat.
Step five: Heat small fry pan over medium-high heat, add 1 teaspoon olive oil to small fry pan and sear each tuna filet for three minutes on each side.
Step five: Pour sauce over tuna filet and serve (I usually serve with rice and a green vegetable!)
