Goat Cheese and Mushroom Puffs




Goat Cheese and Mushroom Puffs are a very easy, delicious and quick appetizer. Puffs can be served hot or at room temperature.

Ingredients:
1 tablespoon Olive Oil
2 cups Button Mushrooms, sliced
1/2 cup of Goat Cheese
1/4 cup Pine Nuts
2 tablespoons fresh Chives, diced
1 tablespoon minced Garlic
1 tablespoon Nutmeg
Phyllo Dough Sheets
1 teaspoon Salt
Fresh Ground Pepper

Step one: Heat 1 tablespoon of olive oil over medium-low heat, saute mushrooms and garlic until mushrooms are soft. Pre-heat oven to 325 degrees.



Step two: In food processor combine goat cheese, pine nuts, chives, 1 tablespoon olive oil, nutmeg, salt and pepper.


Step three: Allow mushrooms to cool, add to food processor, grind.

Step four: Cut three sheets of Phyllo Dough into approximately 2 1/2 inch by 2 1/2 inch squares, place squares on baking sheet.

Step five: Spoon 1 tablespoon of goat cheese mixture onto each phyllo dough square, bring four corners together and twirl.


Step five: Coat each puff with olive oil using a brush. Bake in oven for 15 minutes. Allow to cool and serve.
