Apricot Chicken marinated in Bourbon




This chicken is delicious! It has a very unique flavor and is extremely moist. As long as you allow yourself the time to marinade the chicken the recipe could not be easier!

Ingredients
1/2 cup Bourbon
2 tablespoons Apricot Preserves
2 tablespoons honey
1 tablespoon lemon zest
2 tablespoons lemon juice
1 1/2 tablespoons olive oil
salt
pepper
3 lbs. chicken breasts with skin on

Method

Step one: Preheat oven to 350 degrees. In a medium sized bowl mix together the bourbon, honey, lemon zest, lemon juice, olive oil, salt and pepper and whisk well.

Step two: Poor the marinade into a large Ziploc bag and add the chicken. Shake well to ensure that all of the chicken is covered in the marinade.

Step three: Place the bag in the fridge and marinade for a minimum of 2 hours.



Step four: Place chicken in a Pyrex dish and pour all of the marinade over the chicken. Place in oven and bake for 30 minutes or until chicken is cooked through.
